Artisan or Core: How to Choose Your Chelsea Miller Knife

People ask me this all the time: what is the difference between the Artisan Collection and the Core Collection? Both carry my name and both come from the same idea. They are made differently, and they suit different cooks.
The Artisan Collection
Artisan knives are handmade by me in my studio. Most start as reclaimed horseshoe rasps, the tools farriers use to trim hooves. I keep the raised teeth on the spine of the blade, so every knife carries a little of the tool it used to be. Each one takes days, sometimes weeks, and no two come out the same.
Carbon steel develops a patina over time, and that is part of owning one. Keep it dry and it may never show a spot of red rust.
The Core Collection
Core knives are manufactured to my exact specifications, built from the shapes and proportions of the knives I make by hand. They are stainless steel, so they hold up to daily use without developing a patina. They are hand wash only, and with proper care they won't rust.
Which one is right for you
Choose Artisan if you want a one of a kind piece, enjoy caring for carbon steel, or are giving a gift that should feel like an heirloom.
Choose Core if you want a low maintenance everyday knife, you need a matching set like the steak knives, or you are buying for someone who is new to good knives.
