What is the texture on the hand-forged blades?
The blades are crafted from repurposed horseshoe rasps, which feature raised, triangular, crosshatched teeth. This creates a dual-function knife capable of both cutting and zesting. The rasps have been thoroughly cleaned.
Do you still make all your knives yourself, by hand?
Recent years have seen expansion to include manufactured styles in the Core Collection, built to my exact handmade knife specifications. This reduces waitlists and improves accessibility with stainless steel options requiring less maintenance than high-carbon steel. The Artisan Collection remains entirely handmade by me in my studio.
How should I care for my hand-forged knife?
Hand-forged knives develop a natural patina over time. Keep them dry by wiping with a damp cloth and mild soap, then immediately drying with cotton towels. Apply mineral oil regularly to preserve both blade and handle.
How long is the wait for a custom knife? Do you offer returns?
Typical Artisan chef's knife production takes 4–12 months depending on workload. Core Collection custom orders take 4–6 weeks. All sales are final, but blade adjustments can be made as exchanges.
Are the horseshoe rasp knives forged?
No. Rasp knives use stock removal: grinding away excess steel to preserve the triangular teeth. After shaping, they're heat-treated for optimal hardness and sharpness.
How should I clean the teeth?
Use natural fiber or wire brushes gently. A toothbrush works well. Never use dishwashers. Hand wash with a damp cloth and dry thoroughly.
Will these knives rust?
Handmade knives will develop patina naturally and may never show red rust if kept dry. Regular mineral oil application prevents oxidation. Manufactured stainless knives from the Core Collection won't rust with proper hand care.
Have you ever cut yourself by accident?
Yes, usually while cooking, not while making knives.
